– Olive oil/Butter
– 2-3 cloves garlic, peeled
– 2 Dried red chilli, ( use our own Byadagi chilly) soak it for 10-15 mins
– 1 small bunch of fresh basil , leaves picked(optional)
– 2-3 medium sized chopped tomatoes
– Sea salt
– Freshly ground black pepper
– 3 spoons of Oats
– Dried Italian herbs( easily available in market)
– Parmesan cheese, freshly grated, to serve(optional
Preparation time:20 mins
Take an open cooking pot, fill it with water and let it come to a boil. Add salt to water and then your choice of pasta. Once the pasta is al dente ( 90% cooked) Drain the water (secret ingredient : retain some pasta water)
Aha!! let me introduce the type of pastas available .. penne, fusuli, macaroni, shell, spaghetti, rotini etc. (see the below picture)
Blend together washed tomatoes, garlic and soaked red chillies in a blender, make a smooth runny paste without adding water and set it aside.
Take a wok/kadai, add olive oil/butter, then add the ground paste. Once its comes to a boil, lower the flame and let it simmer for 5-7 mins. Now when you know that raw smell of garlic and tomato is gone, add oats and cook it for 3 mins. Add half a spoon of Italian herbs and mix well. Add pasta water and adjust the consistency. Now add cooked pasta and let it simmer for 3 mins. Check for salt and add grated parmesan cheese. Now turn off the stove and close the lid. (Am sure some souls and soul mates would be wandering around you by now).
Once done, it will look like this (pictorial representation has used Penne pasta). Isn’t it yummy!!!!
Note: Make sure you serve it when the entire family has gathered on Dinner table.
